Reuben Sandwiches

Last year I made corned beef and cabbage for St. Patrick's Day. I was the only one who ate it. I loved it, but Andy and the boys did not. This year I still bought some corned beef when it was on super sale, but I skipped right to one of the best sandwiches on the planet. Seriously, I wish I had one right now.

I don't have an exact recipe, but these are the basic ingredients for a Reuben:

Rye bread
Corned beef
Swiss cheese
Sauerkraut
Thousand Island dressing
Butter or Margarine

I like to butter the outside of the bread first, then pile everything on the sandwich. I also like to use my George Forman grill to cook the sandwiches. I find that using the grill is quick, and I don't make a huge mess trying to flip the sandwich over. The sauerkraut always falls out when I try to flip it on a griddle. I don't have to worry about that anymore, plus it gets the grill lines. :)

  1. I'll eat corned beef and cabbage with you. And I'll even do that reuben thing with you too. I ate a reuben sandwich on St. Patrick's Day and I could definitely go for another right about now.
