The Chewy

Alton Brown is one of my cooking heroes! What a guy! His recipe for chocolate chip cookies is one of my favorites. Here's the recipe found on the Food Network: http://www.foodnetwork.com/recipes/alton-brown/the-chewy-recipe/index.html

The recipe online is slightly different than the one I printed up in 2009.

Here's the recipe I printed in 2009 and have in my recipe binder:
  • 2 sticks unsalted butter
  • 2 1/4 cups bread flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1/4 cup white sugar
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 tbsp milk
  • 1 1/2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  1. Melt butter, add to mixing bowl.
  2. In another bowl combine flour, salt and baking soda.
  3. Add sugars to mixing bowl with butter. Cream butter and sugar on medium speed.
  4. While mixing on medium speed, add eggs, milk, and vanilla.
  5. Slowly add in flour until well incorporated.
  6. Stir in chocolate chips.
  7. Chill dough until firm enough to scoop. I originally chilled until the dough was cold, about 2 hours.
  8. Preheat oven to 375° F.
  9. Grease your cookie sheets, line them with parchment paper, or use a Silpat.
  10. Place cookies evenly on baking sheet, giving them room to spread.
  11. Bake each sheet 8-12 minutes or until golden and puffy. The recipe says 14 minutes but my first tray was done at 12 and my second tray was done in 10 (smaller cookies were done in 8 minutes).

I have made this recipe several times with slight variations. Bread Flour. All Purpose Flour. 1 egg + 1 yolk. 2 eggs. Kosher salt. Table salt. Butter. Salted Butter. Unsalted Butter. Margarine.

The little things certainly yield different results, but they are all good!
