Oatmeal Chocolate Chip Chunk Bars

Before we went to California my niece Natalie came over to play with Abe. She had been invited over before, but up until that day had always said she wanted to be home with her mom. (She's a very sweet little girl.) To celebrate this momentous occasion we made cookies while she was over. I also figured it would help her to have extra happy feelings about coming over to play with Abe.

It's a simple recipe for a cookie bar from http://www.melskitchencafe.com/2008/06/oatmeal-chocolate-chunk-bars.html (And Mel has a whole list of cookies/bars that I am dying to try!) These were terrific! Easy. Tasty. I liked that they have oats in them. I cut the recipe in half and baked in an 8x8 pan.

Here's the recipe:

INGREDIENTS:

1 3/4 cup flour
3/4 tsp soda
1/4 tsp salt
1 cup oatmeal
3/4 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
12 ounces semi sweet chocolate chunks
1 cup chopped walnuts (optional – I left these out)

DIRECTIONS:

Preheat oven to 375. Whisk together dry ingredients and set aside. Beat butter, sugars, egg and vanilla till fluffy and add dry ingredients. Stir in chocolate chunks and walnuts. Press into a greased 9×13 inch pan and bake for 18-20 minutes until light golden brown. (Don’t overbake!!!)
